Located in the Arts District of Historic Downtown Vero Beach, The Patisserie is the place to go for breakfast, lunch, or an afternoon treat. The French-inspired American bakery makes all of their products in-house from scratch with as many local and organic ingredients as possible.

Patisserie Vero Beach

What influenced you to open a bakery and why Vero Beach?  

Christian and I had a similar bakery outside of New York City, which we closed 2 years ago.  One of our investors had a house in Vero Beach. We visited several times and found the perfect spot!  Vero turned out to be a perfect location for us, and was much in need of a from-scratch bakery.

What is the most interesting fact about Patisserie Vero Beach? 

We receive 2,500 pound pallets of Heartland Mill organic flour, milled to our specs, every 2 – 3 weeks.  That amounts to a lot of flour – about 75,000 pounds a year so far!

What’s the absolute greatest thing to ever happen at the bakery?

The best thing so far is how ingrained we become in people’s lives – their births, weddings, birthdays, deaths, and all the holidays and special events through the year.  We become very important to our customers, and vice versa.

What are important factors to you when sourcing ingredients?  

We try to really know our purveyors as much as possible, and more so each day.  Like our products, we appreciate vendors who are obsessed with quality and who have realized that largely, the best quality comes from the happiest animals, plants, harvesters, processors, etc.  Quality.  Traceability.  Responsibility.

As you know, a portion of our profits are donated to the protection and preservation of Orangutans and their habitat. We noticed that you support Save the Chimps. Can you share a little more about that?  

At the Save the Chimps sanctuary, they provide a permanent home for chimps used for medical research and other exploitative purposes. They introduce them into social groups, feed and provide medical care and an incredible natural facility for them to live, play and do so for the life of the animals.  Apparently the Chimps love our bread, which the Save the Chimps folks pick up at the end of each day when we have leftovers. In addition to the Save the Chimps facility   within 30 minutes we also have an elephant rescue facility and one for large cats.

Apple Walnut Cranberry Scone

One of our favorites, we combine our local sourdough culture with organic flour from Heartland Mill (including heritage “Turkey” whole wheat flour) spice it with Red Ape Cinnamon & cloves, fresh apples and dried cranberries. It’s wonderful with brie and on our coffee-roasted pork sandwich with onion jam and Oregon blue cheese.

Coffee Cakes and Blueberry Ginger Cobbler

Red Ape Cinnamon is a key component of our roasted oat striesel topping! This coffee cake is one of the first formulas I adapted – when I was about 10 years old. It hasn’t changed much over the years and though I rarely make it these days myself, it remains a favorite at the Patisserie and highlights our roasted organic rolled oats from Heartland Mill and Red Ape Cinnamon!

Pain Au Raisin

PAIN AU RAISIN (Cinnamon Raisin Danish)
I make these with my 6-grain croissant dough, freshly made pastry cream (infused with Singing Dog vanilla beans), raisins and a healthy amount of Red Ape Cinnamon.

Monkey Bread

Our monkey bread is a huge favorite.  We take pieces of croissant dough (made with high-extraction flour from Heartland Mill and local honey) and toss them with evaporated cane & Red Ape Cinnamon sugar.  We bake them in muffin tins until they are nicely caramelized on the outside and soft and buttery inside.  We do them with our without raisins.

Breakfast Granola

Pastry Chef Sydney B. Frey’s house-made Patisserie granola has a plethora of organic oats, seeds, almonds, local honey and Red Ape Cinnamon.  We serve it in the shop for eating-in and sell a lot of it to go, too.  The cinnamon and citrus-tinged honey work so well together!
