Nothing brings family, friends and neighborhoods together like ice cream. And cousins Kim & Tyler Malek prove it every day with flavors uniquely Portland style! ‘Farm to Cone’ is a phrase Salt & Straw uses to define their style, and that seems like a perfect description! Starting with fresh, local, all-natural cream from family owned farms in the Willamette Valley as a base, they include many locally sourced ingredients and create some amazing flavors like Honey Balsamic Strawberry with Cracked Pepper, Arbequina Olive Oil, and their amazing partnership with several Portland Brewers resulting in a seasonal series of inspired beer flavored ice cream!
Of all the food business options, what made you choose to focus on ice cream?
I wanted to open an ice cream shop because it provides such a terrific place for neighbors, families and friends to gather and treat themselves. I’m excited about helping support strong community and an ice cream shop does just that!
How has your family relationship led to your business growth and success?
My cousin Tyler makes all of the ice cream. He’s brilliant and I love working with him.
Where do you get inspiration for you unique flavors?
We take inspiration from the amazing artisans and farmers throughout the state of Oregon. Ice cream is a wonderful canvas to feature all of the best Oregon has to offer.
How does your focus on local, sustainable ingredients and practices help you create a better product and service?
We are excited to feature local, sustainable companies and help them grow as we do! Also, it’s amazing to introduce people in our communities to other local artisans (salt makers, coffee roasters, beer brewers,
cheese makers, etc.)
Is there an ‘insider tip’ when visiting your locations that you’d like to share?
Yes! You can always skip our line to buy a pint. House rules!
