Why did you decide to open a bakery or how did you get started in this industry? i.e. What’s your story?
My first job in high school was working in a custard stand. I fell in love with ice cream. Since high school, I went off to culinary School to hone my skills and now get to make ice cream for a living. I can’t think of a better job!
What is your favorite item to make and why?
I love making our brittle. Its fun to see science in action- the sugars go from a solid to a liquid state and then back to a solid state. I also love working on the process of creating new flavors. It’s exciting to take an idea and turn it into a finished product.
Any advice to new bakers?
Have fun! Ice cream is like a canvas. Never loose the imagination for making
something new and exciting!
Any funny stories/anecdotes?
Mistakes happen, and they have the ability to turn into an amazing new flavor. When we first opened, we had a chef in the kitchen who accidentally measured out
tablespoons of salt for our darkest chocolate ice cream instead of teaspoons. After
tasting it, we realized it wasn’t our darkest chocolate flavor but was really good. We
decided to sell it as a special batch flavor. It sold out in a weekend and has turned into one of our most popular flavors!
