Thousands of Years of Tradition
Ceylon cinnamon is native to Sri Lanka- formerly called “Ceylon”. It was well known throughout the ancient world that the highest quality cinnamon came from Ceylon. The earliest known writings about Ceylon cinnamon date back to 2800 B.C., describing its health benefits and culinary uses. In ancient times, Ceylon cinnamon was a symbol of luxury and wealth and was more valuable than gold.
High quality cinnamon quills should be like a fine cigar, with uniform thickness, color, quality and clean edges. The Sri Lankan government has created 12 grades of Ceylon quills- based on diameter and foxing (a measure of discoloration caused by moisture). Alba Grade is the highest of these gradings.
