The finest Ceylon cinnamon comes from the southwest corner of Sri Lanka. Ceylon trees thrive in sandy soil and hot, humid conditions. We took our time (6 years to be exact) in locating what we think is the best of the best Ceylon cinnamon. Rest assured – We test our products for lead and other heavy metals and will never sell any product that is dangerous.

Thousands of Years of Tradition

Ceylon cinnamon is native to Sri Lanka- formerly called “Ceylon”. It was well known throughout the ancient world that the highest quality cinnamon came from Ceylon. The earliest known writings about Ceylon cinnamon date back to 2800 B.C., describing its health benefits and culinary uses. In ancient times, Ceylon cinnamon was a symbol of luxury and wealth and was more valuable than gold.

High quality cinnamon quills should be like a fine cigar, with uniform thickness, color, quality and clean edges. The Sri Lankan government has created 12 grades of Ceylon quills- based on diameter and foxing (a measure of discoloration caused by moisture). Alba Grade is the highest of these gradings.

The Production Process

The art of preparing Ceylon cinnamon requires skilled craftsmanship and is a labor intensive process.
