
Paleo Apple-Cinnamon Pancakes

Ingredients
- 2 eggs whisked
- 2 bananas mashed
- 1 peeled apple diced small
- 2 tbsp almond butter
- 1 1/2 tsp Cinnamon
- 1/2 tsp nutmeg
- A little coconut oil for cooking pancakes
Instructions
- Mash the 2 bananas with a fork
- Whisk 2 eggs in a medium bowl
- Add banana mash to eggs
- Dice 1 apple. We used Fuji- choose your favorite
- First stir bananas, eggs and apple chunks together
- Next add almond butter, cinnamon and nutmeg
- Combine all ingredients into a pancake batter
- Pour into pancake shapes in a frying pan, and cook with a little coconut oil over medium heat
- Note: Make these a little smaller than a traditional pancake. They will cook more evenly that way
